We have the the taco trucks here in the Seattle area, but we call them taco wagons. They’re all over the eastern part of the state, because Mexicans have been coming here for many years to pick the crops. I like the tripe tacos. Yum.

Way back when my long-lost, obviously insane French chick came to visit me here, I started paying more attention to food quality than I normally do, and one rule of thumb I came up with is that, at a cheapo Mexican place, if you see a lot of weird cow parts on the menu, it’s often a sign that they’ll use any old crap for meat. But presumably Bourdain knows what he’s talking about.
