I saw on one website Gilbert's El Indio graciously gave their spicy carrot recipe. Is it possible to get a recipe for their salsa?
I used to live a block away from Gilbert's and ate there a thousand times.Has been many years since I now live in N.Y.
The best food and the nicest family!!!

A great Family eating place.
The chips and salsa are addictive.
The Chicken tostada is one of my favorites. When you visit Santa Monica,
visiting Gilbert´s El Indio is a must.
Congratulations for your 33 years of excellent service and food quality.
The Rodriguez Family is a great example of hard and warm workers and entrepeneurs. Blessings. Take Care. Hello to everyone. Ciao!

My first visit was in 1973 when Pickle Bills was down the street and Led Zepplin still ruled the charts. Back then it was almost a ritual, after several bong hits, to trek from Kansas Avenue to Gilbert's to enjoy a homestyle breakfast on a quiet Sunday morning. Donny Brown knew the family and the place became a sort of hangout for us. Actually we were more enthused seeing the daughters working the tables. Gilbert was there, too. He was our favorite conga player, too bad we didn't have a band to incorporate his skills. But the food still stands as a hallmark of family owned culinary quality.

I had 5 dinners a week at Gilberts for the entire 1982. On claiming to Gilbert's son to be their most loyal customer, I was told, no, someone else had 3 meals a day, every day, since Gilbert's opening a few years prior. Gilberts develops cult loyalty. The flashy more expensive places further down Pico don't touch Gilberts. Their fast service stems from their unusual work sharing and waiter circulation - it would make a good Harvard Business School case study.
