    I have not eaten at the Tokyo truck, but I did have the pleasure of dining in Hakuba, Japan’s one and only Mexican restaurant — Uncle Steven’s.

    Even if Steven was a Hispanic name, I’m fairly sure no one working there had set foot in Mexico.

    The recipes seems as if they were translated from Spanish to English, then to Japanese…then prepared from memory.

    And Tecate’s for $7 a bottle! Can’t beat that.
